Apple Pie

Apple pie with a lemon butter pastry


For the filling

6 Cooking Apples

1 tsp cinnamon

3 tbs golden caster sugar

2 tbs cornflour

Sprinkle of seasalt

For the pastry

250g Butter

400g Plain Flour

Zest of one lemon

1 Egg


  1. Peel and dice your apples
  2. Sprinkle with cinnamon, sea salt, cornflour and sugar and set aside
  3. For the pastry
  4. Cube your butter and add to flour, also add your lemon zest and sugar
  5. Work the butter into the flour with your fingers until it resembles breadcrumbs
  6. Add in your egg and bring together with a round bladed knife until a dough forms
  7. Butter a pie dish and on a floured surface roll out half of your dough and use this to line the pie dish pushing the pastry gently into all the edges
  8. Fill with your apple mixture
  9. Roll out the remaining dough and use it to top the pie, decorate however you wish
  10. Finally brush the pie with a beaten egg
  11. I cooked this on my Trager bbq but you can also cook it the oven at 200℃ for around 45 mins or until golden
  • Serve warm with custard, cream or ice cream
