Chicken Kiev

Chicken Kiev – serves 2


2 Chicken breasts
125g Butter
3 cloves of garlic minced
½ tsp dried oregano
½ tsp mixed herbs
1 small bunch fresh parsley
2 slices white bread
1 egg whisked
2 tbsp plain flour
1 tsp smoked paprika
1/4 tsp salt
¼ tsp cracked black pepper


  1. Preheat the oven to 180℃
  2. In a pestle and mortar put butter ,minced garlic, pinch of the salt, pinch of cracked black pepper and your fresh and dried herbs
  3. smash it all up and roll into sausage shape and wrap in cling film put in freezer. (don’t skip this step, it ensures your butter remains in the kiev, during the cooking
  4. meanwhile slit a pocket in the side of your chicken breast
  5. In a food processor put the bread, smoked paprika, sea salt and pepper and whizz to a fine crumb
  6. stuff your chicken with the sliced disks of your frozen butter
  7. Roll your chicken breast carefully in flour, then in beaten egg and finally roll in breadcrumbs,
  8. Place on baking tray drizzle in olive oil cook in oven for 35 mins at 180℃  until golden
