Lamb Fragu

A recipe for Lamb ragu this is a rich comforting dish that can be served with any kinda of pasta.

Ingredients

500 g lamb mince

1 large onion

1 carrot peeled and diced

6 slices bacon chopped

3 cloves garlic minced

100ml red wine

1 tin chopped tomatoes

1 tbs tomato puree

1 bunch chopped parsley

1 bunch chopped basil

1 bay leaf

1 tsp dried oregano

1 tsp nduja paste

Crumbled feta

Pappardelle pasta

Method

In a hot pan add the lamb, carrots, onion, garlic and herbs, brown all for around 10 mins

Add the wine and allow to reduce down to half its quantity

Add in tomatoes and tomato puree and nduja paste, put on a lid and allow to simmer for two hours

Cook your pasta as per pack instruction and serve with crumbled feta
