Lentil and Halloumi Salad
2 Handfuls of rocket salad
1 Tin cooked lentils drained
1 Red pepper
120g Cherry tomatoes halved
3tsp Olive oil
0.5tsp Chilli flakes
0.5tsp Dried oregano
Juice of a lemon
1. Combine the rocket, lentils and cherry tomatoes in a bowl and toss with the chilli flakes, oregano and lemon juice.
2. Chop the pepper and fry with some oil. Once soft, take off heat and mix into the salad.
3. Cut the halloumi into large slices, brush with oil and fry for 1-2 minutes each side.
4. Serve the halloumi with the salad.
