
Mini Yorkshire pudding with steak and horseradish canapes
Ingredients
1 sirloin steak
I bag of pea shoots
1 jar of horseradish
For the Yorkshire puddings
140g plain flour
4 eggs
200ml milk
Sunflower oil for cooking
Method
To make the Yorkshires
Pour a little oil into each hole of a mini Yorkshire tray and place in a hot oven 230c
Mix together all your ingredients and whisk until smooth and lump free if you can make an hour before and allow to sit.
Season with salt and pepper
Pour the batter into each hole with the hot oil and as they are mini they will only take around 12 mins to cook in the top of the oven, don’t open the door!
Season your steak with salt and pepper and cook in a very hot pan for around 4 minutes per sided and allow to rest before slicing very thinly.
Once cooked place a small dollop of horseradish in the bottom of your pudding, followed by some pea shoots and a rolled up slice of your steak.
And your ready to enjoy
