
Watermelon and feta salad
Serves 2
This watermelon, feta and mint salad is a great side dish at a barbecue.
It has wonderful fresh, summer flavours.
Simple and quick to prepare.
Ingredients
.180g watermelon
½ cucumber
½ bunch mint
1 tbsp olive oil
100g feta cheese
1 tbsp balsamic glaze
Here’s is what you do

Chop 180g watermelon
and ½ cucumber in half and scoop out the seeds and then slice into chunks and tip into a bowl with the leaves from ½ bunch mint (keep a few for garnish) and drizzle with 1 tbsp olive oil.
Season and then crumble over 100g cubed feta, the remaining mint leaves, then drizzle with 1 tbsp balsamic glaze
